Incredible Kale Salad

This recipe was inspired by two of my close friends, Aspen and Jill, both of whom made me delicious kale salads on separate occasions. I combined their recipes and added my own twist. The best thing about this salad is that it gets rave reviews from everyone who has tried it so far – it is popping with amazing flavour and zing. Even though it’s called a salad, it’s really a meal because you’ll be very satisfied after you eat it.

Recipes makes 4 decent-sized servings (it’s great to have for left-overs if you keep some aside and wait till the next day to add the dressing to it)

Salad Ingredients:

1 cup of rice (cooked)
1 medium-sized bunch of kale
1 bell pepper
1/4 length of cucumber
1/2 cup sauerkraut
1/2 cup chopped walnuts (I recommend that you use pre-soaked and then dehydrated nuts)
1/4 cup feta cheese
1/2 tsp sea salt

Dressing:
1/2 cup olive oil
1/4 cup apple cider vinegar
2 Tbsp tamari
4 Tbsp nutritional yeast
1/2 Tbsp cumin
1/2 Tbsp coriander
1/2 Tbsp curry powder (or 1 tsp mustard seed powder, 1 tsp turmeric, 1/2 tsp fenugreek, 1 tsp additional cumin, 1 tsp additional coriander)
pinch of cayenne

Optional Salad Ingredients:
6 Strawberries (despite how it appears in the photo – this salad is TOTALLY amazing without strawberries – in fact most of the time I have it without them)
Handful of chopped Snap peas
1/4 section of chopped fennel

Directions:

  • Wash and tear the kale into bite-sized pieces and put into a large bowl (sometimes I also chop the kale into finer pieces on a cutting board)
  • Sprinkle with sea salt and tenderize the kale by scrunching it repeatedly bunch by bunch in your hands until it is fairly tender
  • Chop the bell pepper, cucumber, and feta finely into small pieces and add to bowl with the kale (and the chopped snap peas and fennel if you’re using those too)
  • ┬áIn a small mason jar (or dressing bottle) add the dressing ingredients and shake vigorously
  • Add the dressing to the bowl and stir everything together well

Now you’re ready to assemble your salad into individual servings!

  • Put a small serving of rice in each person’s bowl
  • Add a healthy serving of the salad on top
  • Add a serving of sauerkraut on top (I go heavy on this because I love it!)
  • Add the chopped nuts
  • Add strawberries if you wish
  • Serve it and eat!
